Q: How are you cooking your BBQ?

A: Low and slow baby!  The pit masters at Troop 205 are experienced BBQ cookers.  We will be using a variety of equipment and a variety of fuels to cook your BBQ (hardwoods on a cinder block smoker like the one below – and LP gas in some towable smokers)

Q: Why are you cooking just the 1 lb containers?

A: The 1 lb containers are microwave safe and are ideal to put in the freezer.  Since BBQ will keep in the freezer for months you should consider stocking up!

Q: After I pick up the BBQ on Saturday October 15th from 10:00 am  to 4:00 pm what should I do next?

A: We will have begun the refrigeration process with your BBQ.  If you want to enjoy the BBQ immediately, simply microwave the BBQ in a microwave safe container and enjoy!  Otherwise, you need to get your BBQ into the refrigerator immediately after pick up.

Q: How long can I keep the BBQ in the refrigerator?

A: BBQ can be safely stored in the refrigerator for 3 – 5 days.

Q: How long can I keep the BBQ in the freezer?

A: BBQ can be safely stored in the freezer for 4 – 6 months.  If properly frozen BBQ is safe for more than 6 months but it might loose some of it’s original flavor.

Q: How are you addressing food safety?

A: The most important aspect of food safety is proper temperature management.  Food should be over 145 degrees F or under 42 degrees F.  Cooked food has 2 hours to be properly refrigerated.  We have arranged for onsite refrigeration capability.  Once we have processed your BBQ into the 1 lb containers we will immediately being the refrigeration process.
